SEAFOOD IMPERIAL
1/3 C. butter 1/2 tsp. worchestershire sauce
13 C. flour, sifted 2 C. lobster or tuna
1 & 1/2 tsp. salt 1/2 C. pimiento
1/2 tsp. paperka 1/4 C. diced parsley
3 C. milk 1 small can of mushrooms
Melt butter and add flour, salt and paprika. Cook gently
a few minutes then add milk and worchestershire sauce.
Cook until smooth and thick and add the rest of the
ingredients. Serve on toast or Patty Shells.

SWEET PICKLED FISH BRINE SOLUTION
6 C. Water
1 C. Salt
2 LB. Fish Fillets, Cut into Chunks
Mix Water and Salt in Plastic or Glass Borl. Stir until
Salt is desolved. Add Fish Fillets, making certain that
the Fish are covered with Brins, Cover and Refrigerate
Overnight. Before continuing, Rinse Fish with Cold Water.

BEER BATER FOR FISH
1 c. flour 1 tsp salt
1 tsp baking powder 1 tsp paprika
1 egg 1 c. beer
Combine all dry ingredients, stir in egg and beer. Add more beer
if bater is to thick. Dip fish in bater fry in deep fat until
golden brown and crisp.

CATFISH BATTER
1/2 c. corn meal 1/4 c. flour
2 lb. catfish dash of peper
Use enough water to make gravy of the corn meal and flour. Dip catfish in
batter, deep fat fry in peanut oil until done.
